Sweet garlic from the Var, roasted whole before being incorporated, loses all its sharpness and becomes soft, almost sweet.
That is what gives this tart its character.
Ingredients
1 shortcrust pastry, homemade or shop-bought
2 heads of sweet garlic from the Var
4 eggs
20 cl thick crème fraîche
3 tablespoons extra-virgin olive oil
Fresh thyme, rosemary and savory
Salt, pepper and fleur de sel
To Serve
A white IGP Méditerranée or a white wine from the Var — light, fruity and served well chilled
A few rocket leaves or a green salad
Preparation
Preheat the oven to 180°C. Cut the garlic heads in half widthways, drizzle with olive oil, wrap in aluminium foil and bake for 30 minutes.
Leave to cool slightly, then press the cloves to extract the golden pulp. Set aside.
Line a tart tin with the shortcrust pastry. Prick the base with a fork and blind bake for 10 minutes at 180°C.
Mix the eggs, cream, roasted garlic pulp and olive oil. Season with salt and pepper. Add generous amounts of thyme, rosemary and savory leaves.
Pour the mixture onto the pre-baked tart base. Bake for 25 minutes, until golden and lightly set.
Remove from the oven and sprinkle with fleur de sel. Serve warm with a chilled glass of white IGP Méditerranée.
